Red Yeast Rice

Red yeast rice (RYR) originated in China many centuries ago; it’s fermented with a yeast known as Monascus purpureus. RYR has been used in Chinese culture as a food preservative, food additive, and as a food color--in fact, it’s used to make Peking duck its distinctive red color.
