Vegetarian Burrito

Serves 8

1/2 cup grated low-fat mozzarella cheese
1/2 cup feta cheese
1/4 cup blue cheese
2 teaspoons olive oil
3 diced, medium tomatoes
6 diced, scallions
1 diced and seeded jalapeno
1 teaspoon minced garlic (2-3 cloves)
1 tablespoon oregano, chopped
1/4 cup cilantro, chopped
8 8-inch flour tortillas


Heat oil in a nonstick skillet at medium heat. Put tomatoes, scallions, jalapeno, garlic and oregano into skillet with heated oil. Stir, cooking for 2 minutes, then add in the cilantro. Place in a bowl and set aside.

Combine grated low fat mozzarella cheese, feta cheese, and blue cheese in a bowl.

Over medium heat, place 1 tortilla, in the skillet and put 2 table spoons of the cheese mixture and vegetable mixture on the top and in the center of the tortilla. Fold top and bottom of tortilla over the mixtures. Cook 1 minute, flip it over and cook 1 more minute or until cheese is melted.

Serve warm.
