Turkish Chicken Thighs

Serves 4

3-1/2 Pounds of chicken thighs (approx 8) skinless
1 tablespoon Lemon juice
1 cup fat free yogurt
2 cloves garlic, minced
1 tablespoon minced fresh ginger
2 teaspoon Hot paprika
1-1/2 teas dried mint
1/4 teaspoon salt

Place chicken in a large bowl. Add lemon juice and toss to coat. Whisk yogurt, garlic, ginger, paprika, mint and salt in a separate bowl. Pour yogurt mixture over chicken. Toss to coat well .Cover and refrigerate for at least 1 hour or up to 24 hours. When ready to cook, remove from marinade (discard marinade). Place chicken on a broiler rack and broil until browned on the top approx. 15 mins. Reduce oven to 400 degrees and bake until the chicken is tender and just cooked through. Thigh meat will appear pink even when it is cooked through. Serve immediately.
