Tomato Quiche

Serves 8

1 carton (12 oz.) egg substitute
1 prepared pie crust, either homemade of from the grocery freezer case
1 large tomato, sliced
1 small onion, sliced thinly
1 teaspoon mixed dry Italian seasonings
1/2 teaspoon each garlic and onion powder
1/4 cup shredded cheddar cheese
Olive oil cooking spray
Salt and pepper to taste

Layer tomatoes and sliced onions in the pie crust, and spray the top with olive oil spray. Sprinkle with seasonings, and salt and pepper if desired. Pour egg substitute over the layered vegetables, sprinkle with cheese and bake in a pre-heated 350 oven until the pie tests "done" when a knife is inserted into the center, about 35 minutes. Cut into wedges. Can be served either hot or cold.
