Tofu Stir-fry

Serves 4

1 package (12.3 ounces) baked and marinated tofu, cubed (available in the deli

 case)

1 large package (16 ounces) prepared stir fry vegetables (from the produce

section)

1 tablespoon canola oil
1 tablespoon sesame oil
Soy sauce to taste


Heat the oil in a large non stick skillet. Add the vegetables and stir-fry for about 5 minutes or until crisp-tender. Add the tofu, continue to stir until veggies are cooked. Serve immediately with soy sauce, if desired.

Some people like to serve this over rice or in a warm flour tortilla wrapper.
