Tofu Salad

Serves 4

1 package (5 ounces) baked cutlet tofu (available in the deli case), cubed
1 stalk celery, cleaned and chopped
1 green onion, cleaned and chopped
1 Kosher dill pickle, chopped and drained
1/2 cup dried cranberries
1/2 cup mayonnaise (soy mayo tastes great)
Salt & pepper to taste

Place all ingredients in a medium bowl and toss. Cover and chill for at least 2 hours before serving as a salad or a sandwich filling.
