Spinach And Tomatoes

Makes 4 servings

1 pkg. (16 oz.) frozen spinach, defrosted
2 tablespoons canola or olive oil
2 onions, sliced thinly
2 large cloves garlic, minced
1 piece (about 4 inch) fresh ginger root, peeled and finely chopped
1 can (16 oz.) chopped tomatoes in tomato juice
2 teaspoons each black pepper and chili powder
1 teaspoon salt
1 teaspoon cumin seeds
1 teaspoon ground coriander
2 teaspoons each turmeric and garam masala


Squeeze spinach to remove water. Heat the oil in a non stick pan and sauté the onions and garlic until golden. Do not brown. Add the ginger, and then stir in all the spices and salt. Mix well. Add the spinach to the pan, mixing and tossing well. Add the canned tomatoes, mix well, and simmer about 10 minutes or until the flavors "combine".
