Skillet Shrimp Creole

Serves 4

1/2 cup chopped onions
1/2 cup chopped sweet green pepper
1 tablespoon margarine
1 can (16 ounces) stewed no salt tomatoes
1 can (15 ounces) no salt tomato sauce
1 teaspoon ground thyme
1/2 teaspoon ground oregano
1/4 teaspoon sugar
1/4 teaspoon garlic powder
1/2 teaspoon hot sauce
3 cups white rice, prepared without salt
9 ounces canned shrimp, drained and rinsed

In a large saucepan cook the onion and green pepper in margarine until tender but not brown. Stir in the undrained tomatoes, tomato sauce, thyme, oregano, sugar, garlic powder, and hot sauce. Bring to boiling; reduce heat. Cover and simmer for 5 minutes. Add rice. Cover and simmer about 15 minutes more or until the rice is tender. Stir in shrimp; heat through.
