Sausage And Brown Rice

Serves 8

2 lbs. of turkey Italian sausage cut into 1/2 inch slices. (May substitute chicken breasts)
2 tablespoons olive oil for browning
1 large can of diced tomatoes (do not drain)
1 large can of tomato sauce
1/2 teaspoon Minced garlic
1 medium onion (minced)
1 green pepper (chopped)
1 red or yellow pepper (chopped)

Cajon seasoning (to taste
Tabasco sauce (to taste)


Brown sausage in medium high heat pan.
Drain any excess oil.
Return sausage to pan.
Add all remaining ingredients.
Cook on medium heat (stirring frequently) for 45 minutes.
Serve over cooked brown rice.
