Roasted Red Pepper Hummus

Serves 10

1/3 cup freshly squeezed lemon juice
2 tablespoons Olive oil
1/4 cup sesame seeds
2 garlic cloves, peeled
1/2 teaspoon Ground cumin
1/2 teaspoon Salt
1/4 teaspoon Ground black pepper
1/4 teaspoon cayenne pepper
2 tablespoons Chopped fresh parsley
1 (19) oz can chickpeas, drained and rinsed
3/4 cup roasted red pepper

Place 2 tablespoons Of lemon juice, 1 tablespoon plus 2 teaspoons Olive oil, sesame seeds, garlic cloves, and spices- in the food processor and process until slightly thick and smooth. Add Chickpeas, roasted pepper, and remaining lemon juice and process until smooth. Transfer to a serving bowl and drizzle with remaining olive oil. Refrigerate 1 to 2 hours to allow flavors to blend. Serve with pita wedges or pita chips. Makes 10 servings. (Pita chips or bread are not figured into the nutrition analysis).
