Quick Bean Soup

Serves 6

1 can (28 ounces) crushed tomatoes
1 large onion, chopped
1 large clove garlic, minced
1 vegetable bouillon cube
1 cup water
2 tablespoons olive oil
2 cans (15 ounces) white beans, drained and washed in cold water
1/4 cup chopped fresh cilantro


Sauté onions, garlic, and cilantro in the olive oil until soft but not brown. Add the water and bouillon cube, mix until the cube is dissolved. Add the tomatoes and beans, lower heat, cover and simmer for 20 minutes. Serve with a salad, crisp breads, and fresh fruit cup for a great meal. Some people like to pour this soup over rice or pasta and top with parmesan cheese.
