Protein Power Pancakes

Makes 2 servings

1 teaspoon Vanilla extract
2 tablespoons Low fat Cream Cheese
2 tablespoons 1% Cottage Cheese
2 large eggs
½ teaspoon baking soda
1 teaspoon baking powder
1 tablespoon Splenda sweetener (sucralose)
3 tablespoons soy flour

Blend wet ingredients in blender until smooth. Then add the dry ingredients to blender. Use pulse setting until all ingredients are combined and smooth. Spray griddle or skillet with non-stick oil. Pour batter into two equal pancakes and cook for two minutes on each side or until done. Cover with Fruit Selection such as strawberries or blueberries and enjoy these protein packed pancakes.
