Oriental Crab Cakes

Serves 4

10 ounces imitation crab meat
2 cups frozen peas
3/4 cup egg substitute
1/2 cup onion, chopped
1/3 cup green pepper, chopped
1 cup mushrooms
1/4 teaspoon ground ginger
2 teaspoons ground basil
2 teaspoons olive oil
1 teaspoon soy sauce

Chop crab, peas, onion, green pepper, mushrooms in a food processor for 5 seconds or just until coarsely chopped. Mix with the egg substitute, ginger, and basil. Heat the oil in a large skillet. Pour the batter into the skillet, forming 3" circles. Sprinkle each with soy sauce. Fry 3 to 4 minutes each side, turning carefully. Serve with steamed vegetables and rice.
