Meatless Spicy Steak Stir-fry

Serves 4

12 ounces meatless steak-style strips
1 tablespoon sesame oil
1/2 cup scallions
1 clove garlic
1/4 teaspoon ground ginger
1/8 teaspoon red or cayenne pepper
2 cups Chinese pea pods, halved
1 cup carrots, sliced
1 cup waterchestnuts, raw sliced
3 tablespoons soy sauce
1/3 cup distilled vinegar
1 tablespoon water
1/4 pound raw spinach, chopped
3 ounces dry long grain white rice, cooked


Heat oil in 10" skillet over medium heat for 1 minute. Place steak strips into skillet; add scallions, garlic, ginger and red pepper flakes. Cook and stir for 5 to 7 minutes or until the mixture is heated through. Add pea pods, carrots, waterchestnuts, soy sauce, vinegar, and water. Cook and stir for 3 to 4 minutes or until vegetables are tender. Arrange spinach leaves on four individual plates. Make a nest of rice; spoon steak mixture over rice.
