Hot Pepper Jelly

Makes 7 jelly jars

4 cups processed hot peppers, i.e. peppers that have the seeds and stems removed and that have been processed in a food processor until finely chopped. Do not puree peppers.
1 cup cider vinegar
1 carton powered pectin
5 cups sugar

Place all ingredients except sugar in a large pot and cook on medium-high heat until the mixture comes to a boil. Add the sugar all at once, stir well, and bring to a rapid boil. Boil for 1 minute, remove from heat and pack into 7 jelly-size sterilized jars. Place jars in a large pre-heated water bath and process for 15 minutes. Remove jars and cool. Wipe clean and store for future use or gifts.


Always work with peppers with gloves on, or else you will get a burn on your hands.

Never touch any part of your body after you have worked with hot peppers until you have washed your hands very well. Especially if you wear contacts!

Rub baby shampoo or baby bath lotion all over your hands and especially your fingertips before putting on the gloves and then after the gloves are removed and hands are well-washed.
