Glazed Vegetarian Loaf

Serves 4

1 cup quick or old fashioned dry oats
1/4 cup chopped onions
1 egg white
1/4 teaspoon garlic powder
1/4 cup canned waterchestnuts
1 tablespoon horseradish
1 pound soy crumbles
2 teaspoons mustard
1/4 cup packed brown sugar
2 teaspoons red wine vinegar
2 tablespoons mustard

Combine oats, onion, egg white, garlic powder, waterchestnuts, mustard and horseradish. Mix in soy crumbles. Shape into 4 individual loaves. Place in a foil-lined 13 x 9 x 2 baking pan.

Bake for 20 minutes. Remove from oven and spread with mixture of prepared mustard, sugar, and vinegar. Return to oven and bake 10 minutes longer. Garnish with parsley, if desired.
