Dill Cucumber And Tomato

Serves 8

1 tablespoon minced fresh dill
1/4 teaspoon salt
1 clove garlic, minced
1 (8 ounces) carton plain nonfat yogurt
1 tablespoon lemon juice
2 cups thinly sliced English cucumber
2 cups thinly sliced plum tomato
1/2 cup fresh cilantro sprigs


Combine dill, salt, and garlic; crush using a mortar and pestle. Combine dill mixture, yogurt, and lemon juice, stir well. Cover and chill.

Combine cucumber, tomato, and cilantro in a medium bowl. Add yogurt mixture, and toss well.
