Serves 4

3 egg whites
1/2 cup unbleached flour
3/4 cup skim milk
1 tablespoon canola oil

For dessert crepes, add 1 teaspoon sugar and ½ teaspoon vanilla extract.

Mix all ingredients in a blender jar, blend well.

Heat a "crepe pan", spray well with vegetable food spray, and then pour about 2-3 tablespoons of batter into the pan, swirling the pan around to make a flat, thin cake. Cook over medium heat about 30 seconds; flip, brown, and place on a plate or wax paper until ready to fill.

Fill with fresh berries or fruit of choice, topped with lite whipped cream.
