Cool Summer Salad

Makes 6 servings

4 large tomatoes, thinly sliced
1 large red onion, thinly sliced
2 medium cucumbers , peeled, and thinly sliced
3 Tablespoons fresh, chopped , basil
Salt and pepper to taste.

½ cup crumbled Feta Cheese
½ cup plain fat free yogurt
3 Tablespoons olive oil
2 Tablespoons white wine vinegar

Arrange sliced vegetables on a platter in mixed layers .and season with salt and pepper.

Blend the feta, yogurt olive oil and vinegar until smooth and creamy.

Drizzle the dressing over the layered vegetables and sprinkle with basil.
