Cool Cucumber

Serves 4

4 cucumbers (7 to 8” long)
6 tablespoons red wine vinegar
2 teaspoons sugar
1/4 cup raw shallots, chopped
2 tablespoons water
1/4 teaspoon black pepper
3 tablespoons dried dill weed

Peel cucumbers and finely shred. Place strands in a colander; sprinkle with 1 tablespoon vinegar and 1/2 teaspoon sugar. Let stand 30 minutes. Shake colander to remove excess liquid. Put in bowl and add shallots. Combine remaining vinegar, 1 1/2 teaspoon sugar, and water. Pour the dressing over cucumbers; add pepper and 2 tablespoons dill. Toss lightly with 2 forks. Cover and refrigerate for 30 minutes. Sprinkle with remaining 1 tablespoon of dill.
