Citrus And Herbed Cod

Makes 4 servings

1 lime
½ lemon squeezed for juice
1 Tablespoon olive oil
1 teaspoon honey
1 Tablespoon fresh tarragon, minced
1 Tablespoon fresh parsley, minced
Black pepper to taste
4 cod fillets approx. 6 oz each

Preheat oven to 425 degrees. Arrange fish in an ovenproof dish. Grate the lime and squeeze juice into a small bowl. Mix all of the other ingredients in a small bowl and pour over the cod. Cover loosely with foil taking care that the foil doesn't touch the food. (citrus juice will eat through foil).

Bake for approx 20 minutes or until the fish is flaking.
