Chicken Salad

Serves 4

1 pound cooked chicken, skinned and chopped
1/2 pound white or red seedless grapes, halved
1 small cucumber, peeled, seeded, and chopped
1 small stalk celery, diced
1/2 cup chopped walnuts
1/4 cup low-fat mayonnaise
3/4 teaspoon salt
1/4 teaspoon pepper
Butter or Bibb lettuce leaves

Place all ingredients except lettuce in a large bowl and toss well. Cover and chill several hours before serving on lettuce leaves.
