Chick Pea Rollups

Serves 16

1 can ( 15 oz.) chick peas (garbanzo beans), drained and washed
1 pkg. (12.3 oz) extra firm tofu
1 clove garlic, minced
2 tablespoons olive oil
2 tablespoons tahini
Juice from 1/2 lemon
2 teaspoons ground cumin
Salt and pepper to taste
8 flour tortillas


Place all ingredients (except tortillas) in a food processor and pulse until smooth and creamy. Spread the mixture on each tortilla, roll up, and serve for lunch or cut up as appetizers.

Any leftover spread can be kept in a covered container in the refrigerator.
