Caribbean Black Bean Soup

Serves 6

1 pkg. (14 oz) dry Black Beans soaked overnight
1 envelope onion soup mix
2 tablespoons Olive Oil
2 medium sweet potatoes, peeled and cubed
1 large onion, diced
1 clove garlic, minced
10 cups water
1/2 cup fresh cilantro, chopped
1 (4 oz) can diced green chilies
Low fat sour cream for garnish

The night before making soup, cover the black beans with cold water to soak. Drain the water, place the drained beans and the remaining ingredients in a large pot, bring to a boil, cover and simmer until the beans are tender. Serve with a dollop of sour cream.
