Bran Pancakes

Makes 4 servings

1 cup whole grain buckwheat flour
¼ cup ground flax seeds
1 cup whole wheat flour
¼ cup eggbeaters (egg substitute)
1 tablespoons baking powder
2 cups water
½ cup unsweetened applesauce
1 tablespoon vanilla extract


Combine flours, egg substitute, ground flaxseed, and baking powder until blended. Add water applesauce and vanilla extract. Mix until batter contains only small lumps. Pour batter on a griddle or medium skillet sprayed with non-stick cooking spray into your favorite sized pancakes. Remember—this recipe serves four! Cook for 2-3 minutes on one side or until bottom is golden brown. Flip and cook on the other side another 1-2 minutes or until brown. Sprinkle with powdered sugar, serve hot and enjoy.
