Baked Cod With Scallions And Olives

Makes 2 servings

1 teaspoon olive oil
2-6oz cod fillets
16 chopped black olives
2 tablespoons chopped parsley
1 tablespoon chopped dill
1 bunch scallions ,finely chopped
2 chiles, finely diced
Juice and peel of 1 lime
Freshly ground black pepper
2/3 cup tomato juice
1 1/2 cups fish stock

Preheat the oven to 450 degrees.

Lightly oil a shallow baking dish.
Place the cod in first.
In a bowl combine olives, herbs, scallions, chiles and lime peel with the lime juice.
Spread the mixture over the fillets.
Season with pepper to taste.
Bring the fish stock and tomato juice just to a boil.
Pour this mixture around the cod.
Place the dish in the oven and cook for 12 minutes. Serve immediately, using the juices as a sauce.
