Autumn Casserole

Serves 4

4 center-cut pork chops (about 1/2-inches thick) trimmed
1 tablespoon canola oil
1 small onion, chopped
1 1/2 cups orange juice
1/3 cup brown sugar
2 tablespoons apple cider vinegar
2 medium fresh yams or sweet potatoes, peeled and cut in half, lengthwise
2 large apples, peeled, cored, and cut into slices


Heat the oil in a nonstick skillet, and sauté the pork chops until lightly browned on both sides. Place the chops in a large glass baking dish or casserole.

Sauté the onion in the skillet until softened but not browned. Add the orange juice, brown sugar, and vinegar to the skillet and cook 1 minute, mixing well.

Place the sweet potatoes or yams on top of each pork chop and the sliced apples around the edges. Pour the contents of the skillet over the chops, cover and bake in a preheated 400º oven about 45 minutes or until the potatoes and chops are cooked.
