Anyberry Waffles

Makes 8 servings

1½ cups Whole wheat flour
½ cup Oats, rolled
½ teaspoon Baking powder
½ teaspoon Baking soda
1 2/3 cups Skim milk
2 Egg whites
1 tablespoon Sugar, brown
1 tablespoon Splenda (sucralose non-calorie sweetener)
1 cup Blueberries, sliced strawberries, raspberrries, or any other frozen or fresh berry of your choice
1 tablespoon High-oleic safflower oil

This is a great summer treat with all the fresh berries available. In a large mixing bowl, combine the flour, oats, baking powder and baking soda. In another bowl, mix the milk, Splenda, brown sugar, and oil together. Add to the flour mixture and stir until almost completely blended. With a spatula, fold in blueberries or the berries of your choice. To make this batter lighter, beat the egg whites with an electric mixer (or by hand if you want to use a few more calories) until soft peaks are formed. Fold the egg whites into the batter.

Spray the waffle iron with non-stick spray and pour about ½ cup batter onto the iron. (amounts will vary depending on the type of waffle iron you have.) Cook according to the directions provided with your waffle iron or about 3-5 minutes. Check to be sure the waffle is a golden brown. Sprinkle with a little powdered sugar and enjoy this summer-or anytime-treat.
