Almond Butter Cookies

Serves 12 (3 cookies per person)

1/3 cup margarine
1/2 cup almond butter
1/2 cup packed dark-brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups unbleached white flour
3/4 teaspoon baking soda
1/2 teaspoon nutmeg
2 tablespoons sesame seeds
1 egg white
1/2 cup wheat germ
Whole dry-roasted almonds
Cooking spray


Place the margarine, almond butter, brown sugar, egg, and vanilla in a medium bowl and beat until light and fluffy.

In a separate bowl, stir together the flour, baking soda, and nutmeg until well blended. Stir into the almond butter mixture, then stir in sesame seeds.

In a small, shallow bowl, lightly beat the egg white.

Form dough into 1-inch balls with your hands. Dip each ball in the egg white, then roll in the wheat germ, and press one almond onto the top. Place on lightly sprayed cookie sheet 1 to 2 inches apart.

Bake in a preheated 375º oven for 10-12 minutes until lightly browned. Cool on a rack and store in an airtight container.
